Domaine Cheveau Pouilly-Fuisse 'Aux Bouthieres' 1er Cru 2023Cheveau owns a parcel of 30 year old Chardonnay in the vineyard Aux Bouthiresupgraded to premier cru status in the historic 2020 reclassification. Situated in the commune of Solutr Pouilly very close to premier cru Pouilly, Bouthires contains richer soil with a higher clay content than some of its neighbors, thus producing a wine built more around breadth and power than minerality. Still, its underlying limestone core shines through strongly. This

a refreshingly bone-dry offering that stands in sharp contrast to its many cloying peers

it is bottled in May the year after harvest without fining and with only a gentle filtration

with 5% Grenache adding spice to the bouquet and leavening some of the intimidating structure of the Mourvèdre

the last of which provides notes of appetizing bitterness and salinity which lend structure to the wine

although “Piante a Lapio” is marked notably less by veil-derived elements than a Jura Savagnin

with an average vine age of 20 years

but with a longer cuvaison and an eighteen month élevage

it takes 100 kilograms of grapes to produce a mere 10 liters of Vin de Paille at Montbourgeau

in the climats of Les Treux and Clos Saint-Denis

there is a brief fermentation period with a series of remontages which results in a wine of substantial concentration but with very gentle tannins

and it offers the most powerful
